I'm a Christian and go to church but sometimes I sext or look at porn. What counts? I don't have actual sex with anyone.

Sex as defined is (chiefly with reference to people) sexual activity, including specifically sexual intercourse. More Complex Definition: physical activity in which people touch each other's bodies, kiss each other, etc.: physical activity that is related to and often includes sexual intercourse. Even more Complex Definition: the sum of the structural, functional, and behavioral characteristics of organisms that are involved in reproduction marked by the union of gametes and that distinguish males and females. Thus the activities involved to reproduce said kind. Synonyms: sexual intercourse, intercourse, lovemaking, making love, sex act, (sexual) relations. (Source: Merriam-Webster's Learner's Dictionary)
Now with all of that being said; let's look at your question. You have started off with I am a Christian, which of course is great. However understanding the word Christian is a must. To be a Christian is to be Christ Like. Being Christ Like is BIG, it means that you act like Christ, you have the heart of Christ, you talk like Christ, and people know beyond a shadow of a doubt you are Different or Christ Like Which this discussion must be held for another time due to it's depths. Just like defining Sex; I fill it is imperative to define Christian.
I have said all of the above to answer your question as thoroughly as possible, with enough background that you can follow my heart and mind on this topic.
First off the practice of sexting and the viewing of porn by definition is not sex. Sex is relational; in other words it takes two in union to have sex. God's gift of sex (yes I said gift) was specified toward the first couple and still applies to us today. Be fruitful and multiply; fill the earth Genesis 1:28, and Therefore a man shall leave his father and mother and be joined to his wife, and they shall become one flesh. Genesis 2:24. So sex was God's way of populating the earth and He cared enough to make it pleasurable for His creation. However mankind took what God gave him and made it sinful and meaningless. Might I add man did this very early on in the progression of mankind; read of the days of Sodom and Gomorrah. Again I must say sexting and porn are NOT sex, however it is sin and it does go against God's desire for you and me.
What then makes sexting and porn sin in the eyes of God? Look at this Flee sexual immorality. Every sin that a man does is outside the body, but he who commits sexual immorality sins against his own body. (1 Corinthians 6:18) Anytime we take a part of what God has created and distort it for our own pleasure is sin. This is the same with sexual sins committed alone i.e. porn or with someone other than our spouse sexting. This goes on to say that Or do you not know that your body is the temple of the Holy Spirit who is in you, whom you have from God, and you are not your own? For you were bought at a price; therefore glorify God in your body and in your spirit, which are God's. (1 Corinthians 6:19-20) These acts are no glorifying to our own bodies and especially not to God our creator. And if we are believers Christians than we are temples of God and we are defiling his temple. Thus it falls into the realm of SIN.
In short sexting and porn are indeed sin for to very specific reasons. 1. We having taken something created by God for His purpose and distorted it for our pleasure. 2. In the act of distorting God's natural plans for sex and the sexual relation, we are defiling the temple of God if we have the Spirit of God leaving within us.
As a closing statement; I would pray that you listen to the Holy Spirit living within you and let him direct your path and help you to escape these sexual desires until you are able to find a mate to really take advantage of God's gift with.
